Orange Almond Cake - Gluten free

Ingredients:
3 Oranges
325g Sugar
7 Eggs
375g Ground almonds
20g Baking powder

Method:

Pre-heat oven to 180. Cut oranges in half, put in pot and cover with water. Boil oranges for one hour (20 mins in microwave) allow oranges to cool and puree until smooth.
Beat eggs and sugar with electric mixer until pale, light and fluffy. Fold in ground almonds, baking powder and pureed oranges.
Pour mixture into individual muffin tins for mini cakes and bake until golden or use a 26cm lined cake tin and bake for approx. 40mins or until golden. Mini cakes can be removed from muffin tin a few minutes after coming out of the oven. If you have baked a full 26cm cake allow this to cool completely before removing.
