Ginger Crunch

Ginger Crunch Base Ingredients:
2 tbsp Golden syrup
150g Butter
175g Sugar
1tbsp Crystallised ginger finely chopped
100g Rolled Oats
90g Almonds sliced
105g Self raising flour
45g Shredded coconut

Topping Ingredients:
100g Butter
4 tbsp Ground ginger
5 tbsp Golden syrup
2 cups Icing sugar
3 Tbsp Chopped walnuts
3 Tbsp Chopped crystallised ginger



Pre-heat oven to 180deg. Line 21cm x 27cm tin

Base: Melt butter and golden syrup together in microwave. Combine flour, sugar, oats, chopped ginger, almonds and coconut in a large bowl. Add melted ingredients to dry bowl and mix until fully combined. Press firmly into lined tin. Bake for 20-30 mins.

Topping: Melt butter, golden syrup, and icing sugar in microwave, mix well. Pour topping over base. Top with chopped walnuts and crystallised ginger. Allow to cool completely before cutting.
