Chocolate Parsnip Cake

Chocolate Parsnip Cake Sweet parsnips provide a lovely texture and flavour to this cake, which will have people guessing as to the secret ingredient! This cake is economical as it contains no butter and only three eggs.

Ingredients:
1 ½ cups flavourless oil, such as canola
1 ½ cups caster sugar
1 tsp vanilla essence
3 eggs
2 cups grated parsnip
½ cup chocolate
1 cup flour
1 tsp baking powder
1 tsp baking soda
1 cup cocoa powder
2 tsp cinnamon

Method:
Pre-heat oven to 190°
Grease and line a 22 cm springform cake tin
Combine oil, sugar and eggs to form a creamy mixture
Stir in grated parsnip, chocolate and remaining dry ingredients
Pour into cake tin and cook approximately 1 hour or until a skewer comes out clear. Allow to cool for approximately 10 minutes before turning out.
Either dust with icing sugar or ice with your favourite chocolate icing.
